This
well-tested process
retains much of the nutrition of
the coconut, compared to many other
processes used today, and ensures
a lengthy shelf life. Virgin coconut
oil that retains the taste and
aroma of coconuts will of course
have something in it from the coconut
that others with a bland taste
and odor will not have retained.
In addition, many
coconut oils on the market today
are typically produced using
sun-dried copra which accumulates
molds and bacteria which then
need to be processed out. It
also differs from processes using
fermentation, in which the coconut
meat is left out for a period
of time (traditionally 24-36
hours) to ferment. We're all
for fermenting vegetables like
cabbage, because it increases
nutritional content and enzymes
and the beneficial lactic bacteria,
but with coconut oil, we don't
know of any benefits from the
fermenting, and this time sitting
out can increase the risk of
contamination.
